We don't actually know what the problem is because, unlike Folau, nobody has come out and said anything.

... but Folau plays by the rules of the game, and should not be attacked for his religious views which have nothing to do with football.
A footballer, especially a highly paid, high profile footballer has to abide by more than the rules of the game. He signed a contract to that effect and wasn't forced in any way to do that.
This is a simple case of breach of contract that has become a cause celeb because people like you happen to agree with him.
When it happens to someone else you don't agree with, the great principle of free speech evaporates.
