It takes me a couple days to get back into ketosis if I'm out. What you are talking about is sometimes called a cyclical-ketogenic diet, or carb-loading. If you work out a lot it's useful to keep enough fuel for your muscles, otherwise it will slow your weight loss for sure. That's been my experience at least. Good luck!
