For articulation, echoics won't matter. If anything, I find it easy to test artic in kids with echolalia because they will readily repeat any word I say even more than once if I need to listen again more carefully for phonetic transcription. The problem that can arise is often they echo too quickly and I am barely finished saying the word when they begin to repeat it. So, it can be hard to make out the prevocalic sound.
To avoid your other concerns of him echoing your sighs, etc. I would stick to only asking him to name the picture or just saying the name for him to repeat. I would refrain from saying anything else. With artic testing you are not targeting vocabulary, you only want to hear if he can make the sounds. Hope this helps!
