I find that really shy kids can take forever to interact. You may just have to be patient. I would not try to get him to name things but wait for more spontaneous speech through anything you can find that he thinks is fun... but it can take a lot of trial and error to identify these things. I find a lot of kids like it when I do something silly. Or you could have a "field trip" (meet at a playground) and get him going down the slide, swinging, etc, and see if he'll say more while he's active.
For the parents, maybe they'd appreciate a written handout with suggestions. You can make one up, also ASHA has some as do Super duper and just some web pages out there. I often make up my own so I can customize them... just last week I made a short one with a list of common types of two-word expressions used by kids at the 2-word level. Good luck!
