I did a "head" sleeve for my guard dogs, it was for sends like you saw in the video, not ground fighting. The best for me was a Quarterback helmet. It had a narrow bar (actually two bars) for a face mask for max visibility, but the bar was wide enough to make a secure base for the bite bar.
One tip, get the bite bar built up in front far enough to fill the dogs mouth so their fangs don't reach past the bar and hook you under the chin or the eyes or nose.
I used it for sends to get the dog to target high face hits. When you do ground fighting in a face ask I found it to be very hard on the neck. The dog is on top and feeling very strong. They fight hard to finish you off, and this can mean some neck damage as the dog shakes your head back and forth pretty violently.
