The table is a valuable tool for many different reasons. It allows the decoy added mobility over the dog. This allows either extra pressure in defense or an edge in prey work with that added uncomfortableness from the dog being off the ground and the decoy being faster. Teaching alternative targeting is easier due to the limited mobility of the dog.
The options are limited by your imagination some trainers use it simply because their back has seen better days.
