I'm also thinking that the problem is coming from the skid plate...
Yesterday, I recheck the timing to be sure the advance is correct, (my cheap timing light don't have the adjustment knob on it) I needed to do it by hand with a protractor, it's hard to be really precise with that, but I readjust it and it's now within the specs.
I took it for 3/4 hour ride and (I think)it was a bit better... but it was pretty cold outside 65F, the panel top temperature was in the 130F range, so I will retest it on a warmer day (80-90F) to see if it helped and if that don't helped, I will remove the skid plate to see the difference.
Meanwhile, I know that the perfect running temperature of this engine is 180F... but I want to know where should begin the danger zone ?
